Veggie & Halloumi Skewers
Our Fennel Seed Dressing works perfectly as a marinade for this recipe. It's the closest we've got to a vinaigrette and comes and is perfect to use across the seasons, but for Summer it really comes into its own! Our Smoked Chilli Dressing also works very nicely with this recipe. Cooking with our Yorkshire Dressings always adds flavour - whatever the dish!
INGREDIENTS
Block of Halloumi Cheese (around 200g) - we like Yorkshire Dama Squeaky Cheese
Your choice of veggies, we use Peppers of different colours, Mushrooms, Red Onion, Cherry Tomatoes, Courgette and Aubergine
METHOD
Soak your wooden skewers in water whilst chopping your veg and halloumi into similar sized chunks. Soaking the skewers will stop them burning once on the BBQ.
Load your veg and cheese onto the skewers and drizzle over the Fennel Seed Dressing. Marinade in the fridge for at least 30 mins, but overnight if you can. Turn a couple of times before popping on the BBQ.
Keep using the dressing to coat the kebabs whilst cooking – they could take a minute or two on each side, but keep checking and rotating.
These can also be grilled. Couldn’t be simpler!
