Salmon, Leek & Seaweed Quiche

INGREDIENTS

The perfect quiche recipe, using our super simple Dairy Free Pastry recipe. No need for resting this pastry in the fridge, and it literally takes two minutes to make. It's our Yorkshire Rapeseed Oil that makes for very light and crisp pastry, ideal for any quiche recipe.

The Herby Lemon & Garlic Seaweed Seasoning from our good friends at SeaGrown certainly elevates this quiche filling. Their seasoning blend is brimming with flavour, nutrients and umami goodness, and is the perfect partner for this delicious salmon quiche.

INGREDIENTS


One batch of our Dairy Free Pastry recipe

Yorkshire Rapeseed Oil

2 large leeks, sliced into rounds

2 farmed responsibly salmon fillets, weighing around 240g in total, and cut into chunks

5 medium, free range eggs

250g Ricotta cheese

2 tsp SeaGrown Herby Lemon & Garlic Seaweed Seasoning

Yorkshire Hollandaise, for serving

Preheat your oven to 200C / 180C Fan / 400F / Gas Mark 6. Start by making your plain, dairy free pastry. Roll out on a lightly floured surface, a circle large enough to line a 25cm round, loose bottomed and fluted quiche tin. Trim the edges of the pastry that protude over top and randomly prick the base with a fork, before lining the base with baking paper and then filling with baking beans. Bake blind in the oven for 10 minutes, and once out of the oven, remove the baking paper and beans.

Whilst the pastry base is baking blind, heat a frying pan with a good drizzle of Yorkshire Rapeseed Oil and gently fry the leeks, until softened. Set aside.

In a bowl combine your eggs with the ricotta, along with the seaweed seasoning, and ensure all is mixed together well.

Evenly place your salmon and leeks in your pastry base, pour over the ricotta mix and ensure all the ingredients are covered. Pop in the oven for 40 minutes, until the salmon is cooked, and the top has started to brown.

Serve warm or cold, along with a side salad, some lemon slices, and a good serving of our Yorkshire Hollandaise on the side. Enjoy!
