Lemon & Dill Fish Bites
Fish bites have never tasted so good with a fresh zing of flavour from our NEW Recipe Yorkshire Mayonnaise with Lemon. This recipe makes 8 chunky bite sized pieces, so adapt the recipe for the number you have around the table.
INGREDIENTS
260g cod loin fillet, or other meaty fish fillet, cut into 8 chunky pieces
50-100g fresh breadcrumbs, made from 1-2 slices of wholemeal or seeded bread
Small handful of dill
2 tbsps of Yorkshire Mayonnaise with Lemon, with extra to serve
Salt & freshly ground black pepper
METHOD
Preheat your oven to 200C / 180C Fan / Gas Mark 6.
Prepare your fresh breadcrumbs by blitzing briefly in a food processor before adding the dill along with some salt and freshly ground black pepper and blitzing until it looks like breadcrumbs!
Take your individual fish pieces and coat in the Yorkshire Mayonnaise with Lemon before generously coating in the breadcrumbs and popping on a baking tray lined with greaseproof paper.
Bake in the oven for around 15 minutes until the fish bites are golden brown and the fish is cooked through. It should flake easily and lose any translucent or raw appearance.
Serve with chips, potatoes, or salad, and a good dollop of Yorkshire Mayonnaise with Lemon on the side.
