King Prawn & Smoked Salmon Salad
Full of fresh and zesty flavours from our new Lemon & Caper Dressing, this bright and crisp salad is certain to impress any dinner guests or upgrade lunch!
Serves 4 as a starter or 2 as a light lunch. If serving as a light lunch, use a whole bag of watercress in the recipe.
INGREDIENTS
100g cooked king prawns
100g smoked salmon slices, we get ours from the award-winning Staal Smokehouse, near Beverley
½ bag of watercress, approximately 40g
¼ cucumber, approximately 10cm long
3 spring onions, ends trimmed and sliced lengthways
2 tbsps of Lemon & Caper Dressing
Lemon slices to serve
METHOD
Using a vegetable peeler, peel the cucumber into long ribbons, discarding the watery core of the cucumber.
Next, simply place all the ingredients in a bowl and just before serving stir through the Lemon & Caper Dressing and a little salt and black pepper. Serve immediately with slices of lemon.
